Good King Henry – Seed Packet

ABOUT: Rare and unusual… this forgotten perennial of the vegetable garden was popular up until the 19th century. Arrow-shaped leaves emerge in early spring and may be boiled like spinach, or steam young flowering spikes and toss in butter (the plant is also known as Poor Man’s Asparagus).

HOW TO GROW: Direct sow in early spring, planting seeds 1/4″ deep. Thin to 1 plant per 12″. Does not transplant well , so be mindful of where it will be placed in the garden. If starting early inside, refrigerate seeds 10 weeks prior to sowing to aid germination.

IDEA: This heirloom perennial is a good choice for an edible landscape, food forest or permaculture garden.
